This BBQ cornbread is the perfect side dish for any barbecue meal. It is moist, fluffy, and slightly sweet, with a hint of smokey flavour from the grill. It is also easy to make, using simple ingredients and a cast iron skillet. You can customise it with your favourite additions, such as cheese, jalapeños, or bacon. Serve it warm with butter and honey, and enjoy!
Here’s my recipe for a simple cast iron skillet cornbread:
Cornbread Ingredients:
- 1 1/2 cups ground cornmeal / polenta
 - 3/4 cup self-rising flour
 - 1 ¼ cups buttermilk
 - 1 stick (115g) of butter, melted; plus a quarter of a stick, unmelted
 - 2 eggs, beaten
 - 1 300 g can whole kernel corn, drained
 
Cornbread Instructions:
- Preheat your smoker to 425°F and place your cast iron skillet in to heat up
 - In a large mixing bowl, whisk together the cornmeal, flour, and sugar.
 - In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
 - Pour the wet ingredients into the dry ingredients, add the corn kernels and mix until just combined.
 - Take your cast iron skillet out of the smoker, and melt the 1/4 stick of butter.
 - Pour the batter into the skillet.
 - Bake for 20-25 minutes or until the cornbread is golden brown and a toothpick inserted into the centre comes out clean.
 - Serve the cornbread hot, topped with butter or honey if desired.
