A Killer Potato Salad Recipe, Thanks to Hayley from @rise_and_grill

But Hayley over at @rise_and_grill has come through with a recipe that’ll redeem potato salad for everyone. This isn’t just a side dish… it’s the MVP of your next BBQ spread.
So, shoutout to Hayley for sending me this killer recipe. It’s creamy, tangy, and just fancy enough to impress, but still dead easy to whip up. And yeah, it’s got bacon in it, because of course it does.

The Recipe
– 1 bag of potatoes, peeled and diced
– 6 slices of bacon, diced and cooked
– 2 eggs
– 1 tsp wholegrain mustard
– 1 tsp Dijon mustard
– 1 Tbsp ketchup (I used @barbecuemafia )
– 2 garlic chopped
– 1 shallot diced
– 1/2cup grape seed oil
– 2 Tbsp chives (I love to use the @gourmetgarden_aus )
1. Boil your potatoes til soft but still got a bit of bite (approx 8 minutes). Your fork should be able to slide into a potato but not mush apart. Place into a bowl to cool.
2. You can make your mayo in a blender and just add bits of oil at a time/ or instead of eggs substitute this for a pre made mayo, add the rest of the ingredients and blend.
3. Otherwise blitz the eggs, then add your ingredients and slowly add your oil.
4. Toss sauce through your potatoes and add your bacon.
5. Best prepped a few hours ahead so the flavours can develop (even better if you make it the day before!)
Pro Tips
- Use the right spuds. Waxy potatoes like Kipfler or Yukon Golds are where it’s at. No one wants a mushy mess.
- Make it ahead. Potato salad tastes even better after it’s had a little time to chill and let the flavors mingle.
